10 Minute Truffles


Faster (and much cheaper) than driving to patisserie to buy them!

Ingredients:
200 g nuts, unsalted (your choice)
100g chocolate, chopped (dark, milk or white)
200 g plain biscuits (milk coffee, exmpl)
1-2 tbs rum (or other flavouring liquor)
2 egg whites
Method:
Put all ingredients except egg whites into a food processor. Pulse until crumbs form. You might choose to add chocolate later, if you want some pieces to stay larger (see picture with white chocolate).
Place mixtur into a bowl, add egg whites and mix with hands. Take a spoonfull of this mixture and form balls. You can roll them into ground nuts, cocoa, or leave plain. Place into paper cases and refrigerate.

10 minutne kuglice

Brže (i mnogo jeftinije) nego da ih odete kupiti!

Potrebno:
200 gr oraha ( ili kokosa, ljesnika...vas izbor)
100 gr cokolade, izrendane ili isjecene
200 gr obicnog keksa (petit)
1-2 K ruma (ili dr. aromaticnog pica / ekstrakta)
2 bjelanjka
Nacin:
Stavite sve sastojke (osim bjelanjaka) u elektricnu sjeckalicu i meljite dok se ne formiraju mrvice. Ako zelite ostaviti vece komadice cokolade, stavite je kasnije u aparat. Istresite smjesu u posudu; umijesite bjelanjke i formirajte kuglice rukama. Mozete ih uvaljati u mljevene orahe, kakao ili ostaviti bez icega. Stavite kuglice u ukrasne papire i rashladite.

Capsicums stuffed with Beans and Lentils


After overeating during holidays, somehow comes naturally to turn to vegetarian / light food. Stuffed capsicums (and other vegetables) are regular dish in Balkan countries. This is one of unusual versions, filled with lentils and beans.

Ingredients:
6 medium capsicums, halved and /or other vegetable
2-3 tbs oil
2-3 onions
2 garlic cloves
1 tbs paprika
1 tsp cumin
pinch oregano
2 cans white beans, drained
1 can lentils, drained
salt and pepper to taste
extra olive oil and paprika for dusting
Method:
Heat oil and fry/sautee onion, until translucent. Add garlic, spices, lentils and beans. Cook 5-10 min. Check the seasoning. Mush one part of this stuffing with fork, mix well and leave aside.
Switch oven to 180*C. Prepare a baking dish; oil it well.
Cut capsicums in half, take seeds out.
Fill each half with bean mixture. When all finished, dust with paprika and drizzle with olive oil. Bake for 20+ minutes, or until capsicums soft. Serve warm.



Paprike filovane grahom / pasuljem i lećom

Poslije sve one silne hrane pojedene za protekle praznike, nekako prirodno dodje zelja za vegetarijanskom / laksom hranom. Obzirom da su filovane peprike redovne na stolu mnogih Balkanskih zemalja, odlucila sam pokusati napraviti jednu nesvakidasnju kombinaciju - sa grahom i lecom.

Potrebno:
6 srednjih paprika, prepolovljene (ili drugo povrce)
2-3 K ulja
2-3 crvena luka, sjeckana
1 K paprike
1 k kima
malo origana u prahu
2 konzerve bijelog graha (ili skuhanog)
1 konzerva lece / sociva
so i biber, prema ukusu
maslinovo ulje i paprika za posuti
Nacin:
Zagrijte ulje, proprzite luk, pa dodajte bijeli luk i ostale zacine zajedno sa procijedjenim grahom i lecom. Kuhajte 5-10 min; jedan dio ispasirajte blago viljuskom i promijesajte. Provjerite ukus i ostavite po strani.
Ukljucite rernu na 180*C, pripremite posudu za peci; dobro je nauljite.
Ocistite prepolovljene paprike od sjemena. Filujte svaku polovicu sa pripremljenim grahom. Pospite crvenom paprikom i maslinovim uljem po povrsini i pecite 20+ minuta, ili dok paprike ne omeksaju. Servirajte toplo.

Zucchini Rolls with Cream Cheese and Smoked Salmon

This is an easy and decorative way of preparing zucchinis; Perfect finger food for parties.

Ingredients:
4-5 zucchinis, slice lengthwise (2 mm)
salt, olive oil, pepper (optional)
125 g cream cheese , smoked salmon flavor
125 g plain cream cheese
50-80 g smoked salmon, sliced into small pieces
chives to sprinkle
Method:
Salt zucchinis and brush with olive oil; set aside to wilt. (I grilled one side to speed up the process, but this is not necessary.)
Mix cheeses with salmon pieces. Spread each zucchini with this mixture and rool up. Place on serving plate and sprinkle with chives.


Rolne od Tikvica, sa krem sirom i lososom

Zelim da obavijestim moje blogger prijatelje, da sam u nemogucnosti da komentarisem na mnogim od njihovih blogova!

Dekorativan i lak nacin pripremanja tikvica; perfektni zalogajcici za zabave.

Potrebno:
4-5 tikvice, izrezane po duzini na 2 mm debljinu
so, maslinovo ulje, biber (po zelji)
125 gr krem sira sa ukusom dimljenog lososa
125 gr ovicnog krem sira
59-80 gr dimljenog lososa, rezanog na sitne komadice
vlasac za dekoraciju
Nacin:
posolite svaku tikvicu, premazite uljem i ostavite da omeksa. (Ja sam jednu stranu 'grilovala' da ubrzam proces, ali ovo nije neophodno)
Pomijesajte sireve i komadice lososa.
Premazite svaki komad tikvice sa ovom mjesavinom i zarolajte. Postavite na tanjir za sluzenje i pospite vlascem.

Cherry Pie



"Sweet as Cherry Pie" - unbeatable expression!

Ingredients:
Pie crust-
2 cups flour
2 tbs icing sugar
150 g butter, cold cut into small pieces
1 tbs lemon juice
1-2 tbs icy cold water
Filling-
800 g cherries, pitted
5-6 tbs sugar
zest of 1/2 lemon
1 tbs flour
1 tbs semolina
icing sugar for dusting
Method:
Use food processor to make crust - put all dry ingredients together with butter pieces; pulse until crumbles assemble. Add lemon juice and water. Process until dough start to form. Take out and knead; wrap in glad wrap and leave it aside.
Mix cherries with all other ingredients for filling.
Preheat oven to 180*C; prepare a 22 cm pie dish (oil and dust with flour).
Roll out the dough ( on a floured surface) to a 26 cm circle. Transfer it to pie dish. Place prepared filling onto it; bake 30 min. Take out and let it cool on a wire rack. Place onto serving dish and dust with icing sugar.

Pita sa Trešnjama

Potrebno:
Prhka podloga-
2 solje brasna
2 K secera u prahu
150 gr maslaca iz frizidera, rezanog na komadice
1 K soka limuna
1-2 K hladne vode
Fil-
800 gr tresanja, ociscenih od kospica
5-6 K secera
ribana korica 1/2 limuna
1 K brasna
1 K griza / krupice
secer u prahu za posuti
Nacin:
Napravite tijestona klasican nacin mrvljenjem prstima ili uz pomoc sjeckalice - Stavite sve suhe sastojke, isjeckajte / smrvite, dodajte sok limuna i vodu. Istresite na povrsinu, malo izradite, umotajte u celofan i ostavite odmarati.
Pomijesjte sve sastojke za punjenje.
Ukljucite rernu na 180*C, pripremite 22 cm pleh za pitu.
Razvaljajte tijesto na 26 cm, stavite u pleh i prebacite fil preko toga. Pecite 30 min. Izvadite, stavite hladiti na resetku. Prije sluzenja pospite secerom u prahu.

Finnish Grated Potato Casserole


Great option for mashed potatoes!

Ingredients:
Small knob of butter (for greasing)
2 eggs, beaten
1/2 cup milk
1/2 cup cream
2 tbs flour
1 teas salt
1/4 tsp pepper
4 potatoes, grated
chopped parsley (or other herbs) for garnishing (optional)
Method:
Preheat oven to 180*C. Grease an oven dish (24 X 24 cm). Mix all ingredients, pour it into prepared dish and bake for 40-45 min. Sprinkle with herbs (optional).


Finski zapečeni krompir

Odlicno u zamjenu za pire krompir!

Potrebno:
Malo maslaca za podmazivanje tepsije
2 jaja, lagano umucena
1/2 solje mlijeka
1/2 solje slatke pavlake / kajmaka
2 K brasna
1 k soli
1/4 k bibera
4 krompira, rendana
malo persuna (ili drugog bilja), za ukras (po zelji)
Nacin:
Ukljucite rernu na 180*C. Pripremite posudu za pecenje (24 X 24 cm), namazite je maslacem. Pomijesajte sve sastojke, ulijte u posudu i pecite 40-50 min. Pospite persinom (po zelji) i sluzite.

Arabic Salad with Grilled Rump Steak



'Salata Arabia' is popular in Levant area (Israel and Palestine, Lebanon, Iraq, Eastern Turkey, Jordan and Syria). My son got this recipe from his school friend; original recipe doesn't include avocado.

Ingredients:
Rump (or other steak) for grilling (salt and pepper for seasoning, oil for brushing)
Salad-
3-4 small cucumbers, diced
2-3 tomatoes, diced
3-4 spring onions, sliced; or 1 large onion, diced
mint leaves, small bunch - thorn
parsley leaves, thorn
yellow capsicum, diced (optional)
Avocado (optional), diced
Dressing-
1 lemon, juice
1-2 tbs olive oil
1/2 tsp cumin
1/3 tsp salt
1/3 tsp pepper
Method:
Grill steak to your liking; keep warm.
Mix all ingredients for salad. Shake ingredients for dressing in a small jar; pour over salad. Serve on a warmed plate.
* If you use avocado, cut it in half and use skins for serving.

Recept je dobio moj sin od skolske prijateljice. Originalni recept ne trazi avokado u sastojcima.

Potrebno:
Ramstek (ili drugo meso) za rostilj (so i biber za zaciniti + ulje za premazati)
Salata-
3-4 manja krastavcica, sjeckano na kockice
2-3 paradajza, kockice
3-4 mlada luka, sjeckana; ili 1 veci crveni, kockice
1 manji svezanj lisca mente / nane, iskidani
malo lisca persuna, iskidani
zuta paprika, kockice (po zelji)
avokado, kockice (po zelji)
Preljev-
1 limun, sok iscijedjen
1-2 K maslinovog ulja
1/2 k kima
1/3 k soli
1/3 k bibera
Nacin:
Ispecite meso na rostilju na nacin koji vi zelite; cuvajte na toplom.
Pomijesajte sve sastojke za salatu. U manji galon / teglu stavite sastojke za preljev i protresite. Prelijte preko salate. Servirajte zajedno na zagrijanom tanjiru.
* Ako koristite avokado, presijecite ga na pola i sacuvajte koru za serviranje salate.

Mechoui - North African Style Lamb Roast


Recipe found in book called "The Butcher" (Leanne Kitchen). Mechoui is dish prepared in many countries of North Africa (Algeria, Egypt, Libya, Morocco, South Sudan, Sudan, Tunisia, Western Sahara, Algeria, Morocco, Tunisia, Mauritania, and Libya). Absolutely delicious!

Ingredients:
2 kg(+) leg of lamb
50 g(+) butter, soft
3 garlic cloves, crushed
3 tsp coriander
2 tsp cumin
1 tsp paprika
1/2-1 tsp sea salt
1/2 cup water
Method:
Preheat oven to 220*C.
Make 1-2 cm incisions all over the lamb. Mix all the spices with butter; rub this past all over the lamb, pushing into incisions. Place lamb into a deep roasting pan; pour water into it. Roast for 10 min, baste with pan juices, then lower temperature to 160*C. Roast for another 3 hours, basting every 20 minutes. Take out of oven, let it rest 15 min before carving. Serve with spice mix of 1 tbs ground cumin and 1 tsp salt (optional) - for dipping.




Pečena jagnjetina na sjeverno-Afrički način

Srećan Božić mojim Pravoslavnim prijateljima!

Potrebno:
2kg (+) jagnjeci but
50 gr(+)maslaca, omeksalog
3 cena bijelog luka, isjeckanog / protisnutog
3 k korijander praha
2 k kima, prah
1 k paprike u prahu
1/2-1 k soli
1/2 solje vode
Nacin:
Zagrijte rernu na 220*C.
Napravite 1-2 cm ubode u mesu. Pomijesajte sve zacine sa maslacem. Natrljajte meso sa ovime, uguravajuci u ubode (kao špikovanje). Postavite jagnjetinu u dublju posudu za pecenje, zalijte vodom. Stavite u rernu na 10 min, zatim prelijte sokovima koji su se ocijedili, smanjite temp na 160*C i pecite jos 3 sata. Zalivajte meso sokovima od pecenja svakih 20 minuta. Kada je gotovo, izvadite meso i ostavite odmarati jos 15 minuta prije rezanja. Servirajte sa mjesavinom od 1 K kima u prahu i 1 k soli (po zelji)- za umakati / soliti.
