Salmon Pinwheels



Great idea for lunch boxes...only 6 ingredients!

Ingredients:
2 cups SR flour
1/2 tsp salt
30 g butter, cold in small pieces
3/4 cup milk
1 can pink salmon, drained, bones and skin discarded
1 onion, chopped finely
50 g butter - extra, softened
Method:
Place flour, salt and cold pieces of butter into food procesoor. Pulse until butter incorporated, pour milk while processing. Switch off when it starts sticking together into dough. Dust working surface with flour; roll out the dough into a rectangle (like for swiss roll). Spread softened butter, then place mashed salmon and onion onto it. Leave one longer side without butter /salmon (2cm): brush it with water, then make a roll. Cut into 2-2,5 cm length, place into greased muffin moulds (that way scrolls will keep their shape better). Bake 15-20 min on 180*C.
Makes 12-15 pieces.



Losos zavijutci

Odlicno za 'mobilni' rucak...i samo 6 sastojaka!

Potrebno:
2 solje samodizajuceg brasna
(ili obicno brasno + 3-4 k praska za pecivo, dobro izmijesano i prosijano)
1/2 k soli
30 gr maslaca iz frizidera, sjeckanog
3/4 solje mlijeka
1 konzerva ruzicastog lososa(ocijedjenog, bez kostiju i koze, ispasiranog blago)

1 crveni luk, sjeckan sitno
50 gr maslaca, dodatno, omeksalog
Nacin:
Stavite brasno, so i maslac iz frizidera u elektricnu sjeckalicu. Mijesajte dok se maslac ne pomijesa sa brasnom. Ulijte mlijeko dok sjeckalica radi, i cim se pocne pretvarati u tijesto iskljucite. Pospite brasno po radnoj povrsini, razvaljajte tijesto na pravougaonik. Premazite sa maslacem, zatim lososom i lukom, ostavljajuci 2 cm pri kraju slobodno. Ovaj dio namazite vodom, zatim zarolajte tijesto (kao rolat). Rezite na 2-2,5 cm duzinu i stavite u namastene mafin kalupe (nije neophodno, ali tako ce bolje zadrzati oblik). Pecite 15-20 minuta na 180*C. Dobicete 12-15 komada.

Chick Pea and Okra Curry

Okra (Lady fingers) is not very much used for cooking in many families, including mine. I think it's time to change that. This is a very nice tasting, easy, exotic, vegetarian dish. Perfect for meatless Mondays! Ingredients: 2-3 tbs oil 2 medium onions, sliced 2-3 garlic cloves, crushed 1 tsp turmeric 1,5 tbs Garam Masala 1 chilli, sliced 500 g Okra (small-ones) fresh, canned or frozen 1 can chick peas, drained 2-3 large tomatoes, diced 2-4 tbs thick yogurt, or sour cream salt to taste coriander leaves to sprinkle (optional) Method: Heat oil, fry onion until translucent; add garlic, spices, chilli, okra and chick peas . Stir well, add tomatoes and yogurt. Bring to boil, cook for 15-20 minutes. Season according to your taste; sprinkle with coriander. Serve with rice. Kari od Slanutka i Bamje Bamja je zapostavljeno povrce u mnogim kuhinjama, ukljucujuci moju. Vrijeme je da se i to promijeni... Pocela sam otkrivati razne nacine za pripremu ove egzoticne namirnice. Sljedeci recept je pogodan za vegetarijance i veoma ukusan. Potrebno: 2-3 K ulja 2 crvena luka, srednje velicine, sjeckana 1 k turmerik praha 1,5 K Garam Masala zacina (Indijska mjesavina) 1 ljuta papricica, sjeckana 500 gr bamje (sitne)svjeze, smrznute ili konzervirane 1 konzerva slanutka, ocijedjena 2-3 veca paradajza, isjecena 2-4 K jogurta (ili kajmak / pavlaka sa manje masnoce) so prema ukusu lisce korijandera (po zelji) Nacin: zagrijte ulje, proprzite luk dok ne postane staklast. Ubacite bijeli luk, zacine, bamju i slanutak. Promijesajte; dodajte jogurt i paradajz. Zargijte do vrenja i kuhajte 15-20 min. zacinite prema ukusu i pospite korijander liscem. Servirajte sa rizom.

Havana 2


Something sweet for the end of the week...

Another version of Havana. I prefer this-one with sour cherries and cinnamon.
Previous 'Havana' recipe is for those who like taste of hazelnuts and cream.

Ingredients:
Meringue bases (3)-
6 large egg whites
300 g sugar
100 g hazelnuts (or walnuts), grounded
1/2 tsp cinnamon
Filling-
70 g sugar
1,5 tbs gelatin
1/2 cup sour cherry juice (from a jar)
1/2 tsp cinnamon
1/2 cup milk
4 egg yellows
300 ml thickened cream, from fridge
Short crust base-
200 g flour
40 g sugar
125 g butter, pieces
1 egg
1/2 tsp baking powder
Cherry jam for spreading over the base when is done (Optional)
For decoration-
1 cup sour cherries with juice
1,5 tsp corn flour
Method:
Preheat oven to 150*C (120 fan forced). Prepare tins, cover with paper / silicon.
Whisk egg whites into foam , add sugar spoon by spoon. When very thick, add hazelnuts and cinnamon and fold in. Mark 3 circles (smaller than 22 cm - meringue will expand) on paper, spread meringue onto marked circles (piping is the best solution) Bake for 1 hour, or until bases very firm. Take then out on a wire rack to cool.
While meringues are baking, make filling and short crust base.
Sprinkle gelatin over juice, mix well and heat until totally dissolved. Put aside.
Heat milk and sugar to boil, add beaten egg yellows. Cook until thick. Mix it with gelatin / juice mixture. Let it cool at room temperature.
For base, mix flour, sugar and butter in a food processor (or with your fingers), add beaten egg and baking powder. Roll out to a 22 cm circle. Bake 10-12 min at 180*C. Take out, let it cool then spread with jam (optional).
Check filling - if gelatin / egg mixture started setting, add cinnamon and whisk it with thickened cream from fridge. This will help set the filling immediately.
Assemble the cake:
Short crust base at the bottom, 1/3 filling, then meringue bases each topped with 1/3 filling, except top one. Press top very slightly (with something flat, exmpl slicing board)
For decoration, mix reserved juice and cherries with corn flour. Boil it to thicken. Cool slightly, then put it on top of the cake. Refrigerate for 2 hours before serving.



Havana

Jos jedna verzija!
Ovakva se pravi u Sarajevu (sa ukusom visanja i cimeta), dok se ona vec objavljena verzija (
recept) pravi u Zenici, i ima ukus ljesnika i slaga. (Zitelji oba grada tvrde kako je bas ona torta iz njihovog grada PRAVA I ORIGINALNA)
Ja licno vise volim ovu, samo cu sljedeci put visnje dodati i u fil.

Potrebno:
Beze kore-
6 vecih bjelanaca
300 gr secera
100 ljesnika (ili oraha), samljevenih
1/2 k cimeta
Fil-
70 gr secera
1,5 K zelatine
125 ml soka visanja (iz kompota / tegle)
1/2 k cimeta
125 ml mlijeka
4 zumanca
300 ml slatke pavlake / kajmaka, iz frizidera
Podloga od sipljivog tijesta-
200 gr brasna
40 gr secera
125 gr maslaca / margarina, rezanog na komadice
1 jaje
1/2 k praska za pecivo
Dzem od visanja za premazati gotovu koru (po zelji - nije neophodno)
Za ukrasiti-
1 solja visanja iz tegle sa sokom
1,5 k 'Gustina' ili slicno
Nacin:
Ukljucite rernu na 150*C, pripremite pleh za susenje kora - oblozite papirom ili al-folijom.
Umutite bjelanca i secer u cvrstu smjesu. Ubacite ljesnike i cimet. Sjedinite masu rucno. Oznacite 3 kruga na plehu (manja 0d 22 cm - rasirice se prilikom susenja). Nanesite 3 kore - najlakse je istisnuti masu iz kese. Pecite 1 sat, ili dok se sasvim ne sasuse.
U medjuvremenu napravite fil i podlogu.
Pospite zelatin po soku, zagrijte i mijesajte dok se sasvim ne otopi ( ne kuhati). Malo prohladite. Zagrijte mlijeko i secer u drugu posudu do vrenja, dodajte umucena zumanca i kuhajte dok se ne zgusne. Sastavite ovo sa masom od zelatine. Ostavite hladiti na sobnoj temperaturi.
Napravite podlogu - Vrhovima prstiju utrljajte maslac sa secerom i brasnom, dodajte jaje i prasak za pecivo, umijesite i razvaljajte na 22 cm krug. pecite 10-12 min na 180*C. Kada se ohladi namazite dzemom od visanja (po zelji - ja nisam)
Provjerite stanje zelatinozne mase; ako se pocelo zgusnjavati, ubacite cimet i sa vrhnjem / slagom umutite u cvrsu masu (vrhnje iz frizidera ce pomoci procesu zgusnjavanja.)
Slozite tortu-
Najprije stavite koru sa dzemom, preko nje 1/3 kreme, zatim hrskave kore od bjelanaca sa 1/3 kreme na svaku, osim posljednju. Pritisnite blago necim ravnim (npr daska za rezanje).
Za dekoraciju - pomijesajte sok i visnje sa gustinom, prokuhajte. Zgusnutu smjesu malo prohladite, pa pospite po povrsini torte. Hladite u frizideru najmanje 2 sata prije sluzenja.

Mediterranean Cous-Cous Salad for a Special Party



It was my friend's (Sneza) birthday!
Best compliments to her family for organising such a perfect party - I had so much fun! Theme was '1001 night'. Food was great - I took only a few pictures, and so was entertainment...boys did excellent job!
I was asked to make Mediterranean Cous-cous salad...



Ingredients (for a large salad):
2 cous-cous packs (500 g each)
2 medium eggplants, cut into matches
(salt, pepper, flour and oil for frying eggplants and zucchinis)
2 zucchinis, matches
2-3 spring onions, sliced
1-2 red capsicums, from jar, cut into small pieces
1 jar (250-300 g) sun dried tomatoes, drained
2 small jars artichokes, drained
1 jar pitted Kalamata olives (350g+), drained
salt and pepper to taste
olive oil
Favorite herbs (parsley, oregano, mint, thyme, basil...)roughly chopped
Method:
Prepare cous-cous according to instructions on packet. Keep it aside.
Season eggplant and zucchinis with salt and pepper, dust with flour. Fry until golden; take out on absorbent paper.
Mix all other ingredients with cous-cous add fried vegetable. Season to your taste. Dress with herbs and olive oil.



Mediteranska Kus-kus salata

...napravljena za moju prijateljicu Snezu i njen rodjendan. Sve pohvale njenoj kcerki i ostalim clanovima porodice za organizovanje tako perfektne i zanimljive zabave - meni je bilo SUPER! Tema je bila '1001 noc'; hrana (uspjela sam slikati samo dio toga) i zabaljaci fenomenalni - bravo decki!

Potrebno (za veliku ciniju salate):
2 pakovanja kus-kusa (500 gr svako)
2 srednja patlidzana, sjecena kao pomfrit
2 tikvice, isto sjecena
(so, biber, brasno i ulje za przenje gore navedenih)
2-3 mlada luka, sjeckana
1-2 crvene paprike, kisele, sjecene
250-300 gr polususenog paradajza
2 manje tegle articoka
1 (350 gr) tegla Kalamata (Grckih) maslina
so i biber prema ukusu
maslinovo ulje
Zacinsko bilje (persun, bosiljak, majcina dusica, origano, nana...)
Nacin:
Pripremite kus-kus prema instrukijama na kutiji.
Posolite i pobiberite patlidzan i tikvice, protresite u kesi sa brasnom, pa przite u ulju dok ne porumene. Izvadite i stavite na upijajuci papir.
Pomijesajte sve ostale sastojke sa kus-kusom i przenim povrcem. Zacinite prema ukusu, zatim pospite zacinskim biljem i maslinovim uljem.

Thai Yellow Fish Curry


I love all Thai curry pastes; even commercial-ones are excellent. Cooking with them is versatile, easy and tasty. If you can't find already made yellow curry paste, here is Recipe for Yellow curry

Ingredients:
1 tbs oil
1-2 tbs yellow curry
1 kg bassa fillets
1 can coconut milk
1-2 tbs fish sauce
vegetables cut into small pieces (capsicum, peas, beans...)
coriander leaves for decoration
Method:
Heat oil, fry curry paste until fragrant. Add chunks of fish and coconut milk. Cover and bring to boil. Cook for 5-10 min, then add your favorite vegetables. Cook another couple of minutes, add fish sauce. Sprinkle with coriander leaves and serve over rice or rice noodles.



Thajlandski Žuti Riblji Kari

Recept za Žuti kari (
Recipe for Yellow curry )


Potrebno:
1 K ulja
1-2 K zute kari paste
1 kg bijele ribe, fileti (bas)
1 konzerva kokosovog mlijeka
1-2 K 'ribljeg sosa'
povrce rezano sitno (paprika, grasak, mahune...)
lisce korijandera za dekoraciju
Nacin:
Zagrijte ulje, ubacite cari pastu, proprzite. Dodajte vece komade ribe i kokosovo mlijeko. Pokrijte i dovedite do kljucanja; kuhajte 5-10 min), pa dodajte povce. Kuhajte jos par minuta, zatim ubacite riblji sos. Pospite korijander liscem i servirajte preko rize ili rizinih rezanaca.

'Deconstructed' Sarma



If you like Sarma, but don't want to spend long time rolling small parcels, here is idea for layered sarma. Use 20 large sauerkraut leaves and 2/3 of original recipe for Sarma. Place alternate layers of cabbage leaves and filling, pour with 2 cups water. Cover with al-foil and bake for 2 - 2,5 hours on 180*C. Finish dusting with paprika and slice as a cake.



Slagana Sarma

Ako volite sarmu, ali ne zelite mnogo vremena provesti zavijajuci male rolnice, evo ideje za slaganu sarmu. Upotrijebljeno je 20 listova kiselog kupusa i 2/3 punjenja (znaci oko 500 gr mesa) od ovog originalnog recepta Sarmu (
Sarma) . Slazite listove i punjenje naizmjence u posudu pogodnu za peci. Zalijte sa 2 solje vode, prekrijte al-folijom i pecite 2 -2,5 sata na 180*C. Pospite paprikom u prahu i rezite kao picu / tortu.

Quick Mini Strudels



Ingredients:
Dough-
700 g flour
250 g sugar
200 g butter
1 tsp baking powder
1 egg
1 egg yellow
1 cup milk
lemon zest
Filling-
400 g ground walnuts (or other nuts, poppy seeds...)
4-5 tbs icing sugar
4-6 tbs milk
For brushing-
1 egg white, beaten
Method:
Mix all ingredients for dough; knead couple of minutes. Cover with cling wrap and let it rest. Switch oven to 180*C. Prepare a baking tin.
Meanwhile make filling; Mix all ingredients into a thick paste.
Divide dough into 4 pieces and roll out each to a rectangle, as thin as possible. Spread 1/4 of paste onto each, then form a roll / log. Brush each roll with beaten egg and place into oven. Bake 35-40 minutes, or until golden brown. After taking rolls out of oven, let them cool slightly, then cut into small discs. Place in plastic containers and keep refrigerated (they become softer that way).

Štrudlice

Potrebno:
Tijesto-
700 gr brasna
250 gr secera
200 gr maslaca
1 k praska za pecivo
1 jaje
1 zumance
1 solja mlijeka
ribana korica limuna
Fil-
400 gr mljevenih oraha (ili drugo...mak npr)
4-5 K secera u prahu
4-6 K mlijeka
Za premazivanje-
1 bjelance, umuceno lagano
Nacin:
Umijesite tijesto od svih navedenih sastojaka, zamotajte i ostavite odmarati.
Ukljucite rernu na 180*C, pripremite pleh.
Napravite fil- Pomijesajte sve sastojke u gustu smjesu (ili napravite pola fila sa makom, a pola sa orasima).
Podijelito tijesto na 4, pa svaki dio rastanjite na sto tanji pravougaonik. Premazite svaki sa smjesom oraha i zamotajte. Premazite bjelanceto i stavite peci 35-40 minuta. Kad izvadite strudlice, malo prohladite, a zatim izrezite svaku dok su tople. Smjestite ih u plasticnu kutiju u frizider - tako postanu jos mekse.

3 Cheese Pasta Sauce



Really quick and delicious meal. If you're very hungry choose smaller pasta - it will cook faster.

Ingredients:
500 g pasta (your choice)
Sauce-
1 cup cream
pinch of salt
1/3 tsp white pepper
100 g tasty, grated
100 g Parmesan, grated
100 g Mozzarella, grated
Nigella seeds and chilli flakes for decoration
Method:
Cook pasta according to packet instructions.
Place cream into a pan and bring to boil. Take off heat and add grated cheeses and seasoning; mix until melted. Place pasta onto serving bowl, pour the sauce over and decorate with nigella seeds and chilli flakes. Enjoy!

Tjestenina sa umakom od 3 vrste sira

Extra brzi i ukusni obrok. Ako ste jako gladni, izaberite sitniju tjesteninu - skuhace se brze.

Potrebno:
500 gr tjestenine, po vasem izboru
Umak / sos-
1 solja slatke pavlake / kajmaka / krema
malo soli
1/3 k bijelog bibera
100 gr 'Tasty' sira / tvrdi sir jaceg ukusa
100 gr Parmezana
100 gr Mozarele, svi rendani
Čurekot / crni sezam i komadici suhe crvene paprike za dekoraciju
Nacin:
Skuhajte tjesteninu po uputstvima na vrecici.
Zagrijte pavlaku do vrenja, skinite je sa vatre pa ubacite zacine i rendane sireve. mijesajte dok se sve ne stopi.
Stavite tjesteninu u posudu za sluzenje, prelijte sos preko i ukrasite po zelji.

Slow Cooked Chilli Beef Topped with Herb Scones



This is a lovely, country style, slow cooked dish, that I love cooking during winter time. It is summer time in Australia, but it's raining and is relatively 'cold' outside, around 22*C. I live in Sydney for 18 years, and this is first summer that temperatures didn't reach/pass 40*C; That's way I decided to cook this winter meal in the middle of summer.

Ingredients:
1 kg gravy beef (or chuck)
2 tbs olive oil
2 onions, chopped
2-3 garlic cloves, chopped
2 tsp cumin, ground
1 tsp paprika
1/2 -1 tsp chilli powder
1 cinnamon stick
800 g can diced tomatoes
1 cup beef stock
salt, pepper to taste
Scones-
1 cup flour
1/4 tsp salt
25 g butter
1 tbs chives, fresh, chopped
1 tsp thyme, chopped
1/4 cup milk
Egg white for brushing and sesame seed for sprinkling (optional)
Method:
Preheat oven to 170*C.
Heat oil in a saucepan (that can be covered and used in oven too), saute onion and garlic. Cut meat into large chunks; add it to pan and cook stirring for 5-6 minutes. Sprinkle cumin and paprika, add other spices; mix well. Pour beef stock, add tomatoes. Cover the pan and place it in the oven. Cook for 2 hours.
Meanwhile make scones-
Rub flour and butter with your fingers, add salt and herbs. Mix well then pour milk; mix dough with a spreading knife, until just combined. Dust bench with flour, place dough on top and roll to 1 cm thickness. Cut scones out (4-5 cm diameter), brush with beaten egg white and sprinkle with sesame seeds.
Finish-
Remove pan from oven, take meat out and shred it with fork. Return it back to sauce, place scones on top and bake (uncovered) for another 20-25 min.



Čili Govedina sa Pogačicama na vrhu

Ovaj recept je 'seljačkog' stila i obično se priprema zimi, jer se dugo krčka. U Australiji je sada ljeto, ali cijelo vrijeme kiša pada. 'Hladno' je - oko 22*C, što ja za mojih 18 godina provedenih ovdje još nisam zapamtila. Obično su ljeta jako vruća sa mnogo dana preko 40*C. Iz tog razloga sam odlučila pripremiti ovo zimsko jelo.

Potrebno:
1 kg govedjeg mesa za raskuhavanje (misici ili od vrata)
2 K maslinovog ulja
2 crvena luka, isjeckana
2-3 cena bijelog luka, isjeckana
2 k kima u prahu
1 k paprike crvene, prah
1/2 - 1 k cili praha (ljuta paprika)
1 stapic cimeta
800 gr (konzerva) paradjza sjecenog
1 solja govedje supe / bujona
so i biber po ukusu
Pogacice-
1 solja brasna (solja = 2,5 dl)
1/4 k soli
25 gr maslaca
1 K vlasca, sjeckanog
1 k timijana / majcine dusice
1/4 solje mlijeka
Bjelance za premazati i sezam za posuti (po zelji)
Nacin:
Ukljucite rernu na 170*C.
Zagrijte ulje u šerpi (koja ima poklopac i može u rernu), proprzite luk. Ubacite meso koje ste isjekli na vece komade, dinstajte 5-6 min. Dodajte zacine, promjesajte pa ubacite bujon i paradajz. Poklopite serpu i stavite je u rernu. Krčkajte 2 sata.
Napravite pogacice-
Izmrvite brasno i maslac prstima, ubacite so i zacinsko bilje. Promijesajte, zalijte mlijekom i nozem (za mazanje) umijesite tijesto; nemojte ga preraditi. Pospite brasno po radnoj povrsini, razvaljajte tijesto na 1 cm debljinu, izrezite pogacice (casom 4-5 cm promjera), premazite ih bjelancem i pospite seamovim sjemenom.
Za zavrsetak-
Izvadite serpu iz rerne, povadite meso, iskidajte ga viljuskom na 'rezance'. Vratite meso u serpu, postavite pogacice po vrhu i smjestite u rernu (ne poklopljeno) na jos 20-25 minuta.

Semolina Dumplings Stuffed with Plums


This dessert is speciality of Balkan countries. Traditional dough is made with mashed potato and flour - similar to the gnocchi dough. Instead of plums, apricots or even nectarines and peaches can be used as filling.

Ingredients:
Dough-
2 cups water
1 cup semolina
2 tbs oil
pinch of salt
2 tbs sugar
3/4 cup (+) flour
2 small eggs
1 tsp baking powder
Filling-
sugar plums, pitted (or others; if too big half them). I used red plums (halves)
For rolling/ dusting-
bread/biscuit crumbs, poppy seeds, icing sugar
Method:
Bring water, oil and sugar to boil. Add semolina and stir vigorously to make a thick porridge. Let it cool. Beat eggs, then add to the porridge along with enough flour(with baking powder) to make dough. Divide dough into equal pieces with hands dusted in flour (large ice-cream baller can help). Put a plum in the middle of dough and roll between your hands. Bring a saucepan of salted water to boil. Drop 4-6 dumplings into it and cook for 6-8 min, depending on size of balls. Take cooked-ones out on absorbing paper, then roll them into crumb/poppy seed mixture. Dust well with icing sugar and enjoy!


Šljive u knedlama od griza

Knedle sam mijesila po

Sanelinom receptu
s malim izmjenama (1/2 kolicine sam mijesila, dodala sam secer u tijesto i malo vise griza i brasna)

Potrebno:
Tijesto-
1/2 l vode
1 solja griza
2 K ulja malo soli
2 K secera
3/4 solje brasna (+)
2 manja jajeta
1 k praska za pecivo
Fil-
sljive, ociscene od kospica (ako su vece prepolovite ih)
Za uvaljati-
mrvice hljeba ili keksa, mak i secer u prahu
Nacin:
Skuhajte gustu kasu od vode, ulja, secera i griza; prohladite. Dodajte ostale sastojke; umijesite u tijesto. Podijelite na jednake loptice u koje cete stavljati sljive i sa pobrasnjenim rukama oblikovati u loptice. Kuhajte ih u blago zasoljenoj vodi 6-8 minuta, u ovisnosti o velicini knedli.Izvadite knedle i ostavite ih na upijajuci papir da se ocijede. Pomijesajte mrvice sa mako, uvaljajte knedle, pa ih dobro pospite secerom u prahu. Uzivajte dok su tople!

2 Eggs (Mayonnaise Recipe)



I get fresh eggs every day, thanks to my lovely hens. Their eggs look and smell differently than the bought-ones. Did you know that one hen can produce up to 800 eggs. Angela (white-one, pictured) produced around 500 eggs by now, and is still laying. If an egg is $0.25, that means I got worth of $125 of fresh organic eggs from her only. Thanks Angela!

Zahvaljujuci mojim dragim kokama, imam svjeza jaja svaki dan. Njihova jaja izgledaju i mirisu drugacije od kupovnih. Majonez i dekoracije za kolace!


Mayonnaise



Ingredients:
2 egg yolks, room temp
1/2 lemon, juice
1/2 cup olive oil
1/2 cup light olive (or vegetable) oil
Pinch of salt
1 tsp Dijon (or German) mustard
1 tbs hot water (optional)
Method:
Place egg yellows in a small bowl. Whisk with electric mixer, adding drop by drop of oil until well mixed. This is important to do, otherwise mayonnaise might not turn well. When 1/4 of all oil is mixed, then you can pour the rest slowly. Add salt and lemon juice, whisking all the time. Check the taste, add mustard and hot water if mayonnaise look too thick. Spoon mayonnaise in a jar and keep refrigerated up to 10 days.

Majoneza

Sastojci:
2 zumanca, sobne temp
1/2 limuna, sok
1/2 solje maslinovog ulja
1/2 solje nekog drugog blagog ulja
prstohvat soli
1 k blagog senfa
1 K vrele vode (po potrebi)
Nacin:
Stavite zumanca u manju posudu. Miksajte ih sa najvecom brzinom, dodavajuci kap po kap ulja dok se ne umijesa komletno. Ovo je vazno, jer ako naglo naspete ulje majoneza nece uspjeti. Tek kada zavrsite umiksavanje 1/4 ulja, onda mozete usuti ulje u tankom mlazu. Dodajte so i limunov sok, mijesajuci stalno. Provjerite ukus, ubacite senf i vrelu vodu ako vam se majonez ucini pregustim. Smjestite ga u ciste tegle i drzite u frizideru do 10 dana
.


Decorations for Cakes


Ingredients:
2 egg whites
8 tbs icing sugar
food colour
Method:
Whisk egg whites until soft peak forms. Add icing sugar teaspoon by teaspoon, whisking all the time. Add food colour and continue mixing until you get very thick foam. Prepare a baking tin lined with al -foil. Place meringue into piping bag. Form desired shapes onto foil. Place tins in 100*C oven and dry shapes for 1 hour. Take out and let it cool completely; then store in a container for up to 3 months.

Ukrasi za kolače

Potrebno:
2 bjelanca
8 K secera u prahu
prehrambena boja
Nacin:
Umutite bjelanca u snijeg, zatim pocnite dodavati kasicicu po kasicicu secera. Dodajte zeljenu boju i umutite u veoma cvrst snijeg. Istisnite oblike na al foliju i susite ukrase 1 sat na 100*C. Ohladite ih dobro prije smjestanja u kontejner. Cuvati na suhom i hladnom mjestu do 3 mjeseca
.

Beer Crackers



Something savoury for Friday...with drinks. Have a good weekend everyone!

Ingredients:
1 kg flour
1/2 tsp baking powder
2 tsp salt
330 ml beer
200 ml oil
100 g sesame seeds
100 g poppy seeds
1 egg beaten, for brushing (optional)
Extra seeds for sprinkling
Method:
Switch oven to 180*C. Prepare baking tins.
Mix all ingredients into a stiff dough. Roll out to 3 mm thickness, and cut out shapes. Place onto tins, brush with egg and sprinkle with seeds. Bake for 10-12 min.
Keep on a cool and dry spot for a couple of weeks.

Krekeri sa Pivom

Nesto slano za petak...uz pice. Dobar vikend zelim svima!

Potrebno:
1 kg brasna, svenamjenskog
1/2 kesice praska za pecivo
2 kasicice soli
1 boca piva, (3,3 dl)
2 dl ulja
100 gr sezama
100 gr maka, nemljevenog
1 jaje za premazivanje (po zelji)
Dodatno sjemenki za posipanje
Priprema:
Pomijeshati sve sastojke u glatko tijesto.
Razvaljati na 3 mm debljine, te vaditi razne oblike (ili rezati nozem na prutice).
Peci na 180*C 10-12 min.
Pozelji, prije pecenja mozete premazati umucenim bjelancem/ jajetom i posuti sa sjemenkama po vasem izboru. Na hladnom i suhom mjestu traju nekoliko sedmica.

Little Peaches


Another popular (and economical) recipe from Balkan countries...

Ingredients:
4 eggs
pinch of salt
250 g sugar
250 g flour
1 tsp baking powder
1 cup oil
flavourings to your taste (vanilla, lemon zest, rum...)
extra flour
For filling-
Nuts processed, chocolate melted (or jam), a bit of milk
For dipping-
crystal sugar
a few drops of red and yellow food colours (each dissolved in 1/2 cup water)
Method:
Mix all ingredients by hand or mixer. Refrigerate for 2 hours +. Prepare baking tin, line with paper. Switch oven to 170*C.
Take the dough out, add more flour (so dough is pliable) and roll into balls. Place onto baking tin with some space between. Bake for 12-15 minutes. Let cool slightly, then hollow carefully each biscuit. Reserve the crumbs.
Place crumbs into food processor, add some nuts and melted chocolate (or jam + milk if needed) and process. Fill each hollowed biscuit with this, then press 2 together.
Dip each peach into red (one side) and yellow (other side) and roll into crystal sugar. Let it dry onto absorbent paper before serving.



Breskvice

Popularne, simpaticne, ekonomicne...

Potrebno:
4 jaja
malo soli
250 gr secera
250 gr brasna
1 prasak za pecivo
1 solja ulja (250 ml)
Limunova korica, rum, vanila za aromu (sami izaberite)
jos brasna dodatno
Za fil-
Orasi, cokolada (ili dzem), malo mlijeka
za umakati-
secer u kristalicima
po par kapi crvene i zute boje rastvorene u 1/2 solje vode (svaka)
Nacin:
Umijesite tijesto od navedenih sastojaka; stavite u frizider na 2+ sati. Ukljucite rernu na 170*C, pripremite pleh sa papirom.
Izvadite tijesto iz frizidera, dodajte jos brasna, tako da mozete formirati kuglice.
Rasporedite ih na pleh sa malo razmaka. Pecite 12-15 min. Izvadite i malo prohladite. Zatim pazljivo izdubite svaku. Sacuvajte mrvice, koje cete pomijesati sa malo oraha, cokolade otopljene (ili dzem) i malo mlijeka. Ovime punite svaku lopticu, pa sastavljajte po 2. Umocite savku u jednu boju, drugu starnu u drugu boju, pa uvaljajte u secer. Ostavite na upijajuci papir, zatim sluzite.
