Farinata ( Panelle / Cecina / Socca)




My first farinata was baked on Tuesday. I saw it on a blog that I follow (http://filipovabaka.blogspot.com.au/2014/01/farinata-sa-susamom.html ). I wanted to use chickpea that is sitting in my pantry for couple of months. The recipe was very simple, but I didn't expect much of flavour. The farinata disappeared in a very short time, while dinner was cooking.
Next farinata was due next day. I made them as little individual-ones (pie moulds), with onion and rosemary. They were beautiful! I've researched a bit and found out that it's mostly made in Italy ( Sicily- 'Panelle', Liguria- 'Farinata', Tuscany- 'Cecina') and in France ('Socca'). It is usually  flavoured with pepper, but some areas prefer onion and rosemary. (Vesna added her own touch by sprinkling some sesame seeds on top). 
Key for good results are: make batter at least 1 hour before baking, make sure the (pizza) pan (with olive oil) is well preheated (and not too thin), and don't omit or reduce oil; it gives crunchy texture to the Farinata.
I see myself baking it regularly in future, because it's quick, easy, delicious and nutritious.

Ingredients:
2 3/4 cup chickpea flour (besan), (250g)
1 tsp salt
1/2 tsp pepper
rosemary and chopped onion, or seeds (your choice), 
2 1/2 cups water
5 tbs olive oil (1 tbs goes into batter)
Method:
Mix flour, pepper, salt, 1 tbs oil and half water well. Add other half of water, mix and leave aside for 1 hour or more.
Preheat oven to 200*C . Pour 4 tbs oil into a pizza pan (32cm), place in oven (if you want onion in your farinata, place it on bottom over oil) to heat it. Take out and pour batter in your pan, sprinkle with rosemary (or seeds). Return to oven and bake for 30+minutes. Farinata should be thin as pancake and crunchy. Enjoy!




Moju prvu 'Farinatu' sam ispekla u utorak. Recept sam vidjela kod Vesne na blogu (http://filipovabaka.blogspot.com.au/2014/01/farinata-sa-susamom.html). Imala sam nesto slanutkovog (leblebije) brasna koje sam trebala iskoristiti.
Recept je bio izuzetno jednostavan, ali iskreno nisam ocekivala neki posebno ukusan obrok. Ta farinata je nestala u trenu, dok se ostatak vecere pekao.
Sljedeca farinata je bila ispecena sutradan! Napravila sam ih kao male 'pitice', sa crvenim lukom i ruzmarinom. Bile su divne. Malo sam istrazivala net i pronasla da se farinate prave uglavnom u Italiji ( Sicilija- 'Panelle', Ligurija- 'Farinata', Taskanija- 'Cecina') i Francuskoj ('Socca').
Zacinjava se biberom, lukom i ruzmarinom uglavnom. (Vesna je dodala sezam na povrsinu, sto mi se jako dopalo).
Kljuc za dobru farinatu je - Napravite 'tijesto' bar 1 sat prije pecenja i zagrijte tesiju (za pizu) sa maslinovim uljem dobro, prije nego uspete farinatu unutra. Tepsija ne bi trebala biti jako tanka, jer bi se mogla uvrnuti pod temperaturom. Takodje nemojte smanjivati kolicinu ulja, koje ima ulogu da da hrskavu teksturu.
U buducnosti, vidim sebe kako redovno pecem farinatu, jer je brzo, lako, hranjivo i ukusno jelo.

Potrebno:
250 gr brasna leblebije / slanutka (oko 2 3/4 solje)
1 k soli
1/2 tsp biber
luk, ruzmarin ili sjemenke za povrsinu
600 ml vode (oko 2 1/2 solje)
5 K maslinovog ulja  (1 kasika ide u tijesto)
Nacin:
Pomijesajte brasno, so, biber, 1 K ulja i pola vode. Dobro promijesajte, pa dodajte preostali dio vode. Ostavite 1 sat najmanje da odstoji. 
Ukljucite rernu na 200*C. Uspite ulje u tepsiju za pizu (32cm), zagrijte u rerni (ako zelite farinatu sa lukom, ubacite ga preko ulja da se malo proprzi). Uspite tijesto, pospite izabranim sastojcima u vratite u rernu. Pecite oko 30+ minuta. Farinata treba da bude tanka kao (deblja Americka) palacinka i hrskava sa strane. Uzivajte!

Baked Ricotta (savoury)


Ricotta is so versatile and I always have it in my fridge / freezer. This is one of savoury ways to use it; Easy, gluten free protein snack.

Ingredients:
  • 450-500 g whole-milk ricotta 
  • 2 large eggs
  • 100 g Parmesan, grated
  • Oregano leaves, (or basil) finely chopped - to taste
  • Salt and freshly ground black pepper, to taste
   Method:
   Switch oven to 200*C; grease a cake pan or muffin tins.
   Beat Ricotta and eggs, add other ingredients. Spoon mixture into moulds. 
   Bake for 15-25 minutes (depending what tin you used for baking), or until golden-brown and puffed. Cool slightly, then take out carefully. Serve warm or cold.
   (Slices of vegetables can be placed on top before baking)

Pecena Rikota

Rikota (kvark) je veoma visenamjenski sir i uvijek ga imam u frizideru ili u zamrzivacu.
Ovo je jedan od 'slanih' nacina da ge upotrijebite. Lagani, bezglutenski obrok.

Potrebno:
450-500 gr rikote (kvark / svapski sir), punomasni
2 veca jajeta
100 gr parmezana, ribanog
Origano (ili bosiljak), sjeckano lisce - kolicina po zelji
so i biber, crni svjeze mljeveni, po ukusu

 Nacin:
Ukljucite rernu na 200*C; nauljite kalup za tortu / mafine.
Umutite sir sa jajima, dodajte ostale sastojke i izmijesajte dobro. Uspite u odabrani kalup i
pecite 15-25 minuta (u zavisnosti o velicini kalupa), ili dok ne postane zlatno-zuto. 
Prohladite, zatim pazljivo izvadite iz kalupa. Sluzite toplo ili hladno.
(Reznjevi povrca se mogu smjestiti na povrsinu prije pecenja, ili pecenu rikotu mozete preokrenuti naopako i sluziti)

Korean Zucchini Pancakes



Feeling sick of meat, sweets and rich food? I do! Here is recommendation for some  light, vegetarian food;  perfect as canape bases too!

Ingredients:
Pancakes-
2-3 zucchinis, grated or cut into matchsticks
1 egg, beaten,  
1 green onion, sliced finely (or 1/4 medium onion)
3/4-1 cup flour
1/2 cup water
salt and pepper
a bit of oil for frying (or nonstick pan)
Dip-
2 tbs soy sauce
1 tbs water
2 tsp red vinegar
1 tsp sugar
black pepper
sesame oil (a few drops) and seeds (optional)

Method:
Mix all ingredients for pancakes. Heat a pan (and oil, if using). Spoon mixture into pancakes, as big or small as you want. Cook for 1-2 minutes, then turn and cook other side. Place onto serving plate.
For dip, Mix all ingredients and place into a shallow dish. Serve warm. Optionally, top with some prawns, salmon or other toppings.

 
Korejski 'penkejks' sa tikvicama

Je li vam muka od mesa, kolaca i konstantnog prejedanja teske hrane? Meni jeste! Evo prijedloga za lagani, vegetarijanski obrok; perfektno i kao osnove za kanapes.

Potrebno:
'Penkejks'-
2-3 tikvice, rendane ili sitno sjeskane na prutice
1 jaje, umuceno
1 mladi luk, sitno sjeckan (ili 1/4 srednjeg crvenog luka)
3/4 - 1 solja brasna
1/2 solje vode
so i biber
ulje za przenje (ili neprijanjajuca tava)
Umak-
2 K soja sosa
1 K vode
2 k crvnog sirceta
1 k secera
crni biber
ulje sezama (par kapi) i sjeme (opciono)

Nacin:
Umijesajte sve sastojke za penkejks. Zagrijte tavu ( i ulje ) i kasikom vadite smjesu u tavu (onoliko velike koliko zelite). Pecite 1-2 minute, zatim okrenite i pecite i drugu stranu. Stavite ih na tanjir za serviranje.
Za umak, pomijesajte sve sastojke i smjestite u plitku posudu. Servirajte tople, ili koristite ih kao podloge za kanape; sa kozicama, lososom ili necim drugim.

Rustic Pesto and Ricotta Roll


Not much to say about this recipe, except that is very handy to have it when you don't have much time to spend on lunches and snacks for couple of days. Just cut off a piece, and tasty meal is ready . Important thing is that is packed with proteins and carbs...Kids love it.


Ingredients:
Dough-
3 1/2 cups flour
1 1/2 tsp salt
2-3 tbs olive oil
2 tsp yeast
1 1/3 cups water (skin warm)
Filling-
500 g ricotta cheese
1 egg
1 tsp salt
2-3 tbs pesto (basil preferably - recipe)
Method:
Mix all ingredients for the dough, knead for 5 minutes, cover and let it rise in a warm spot. You can use bread machine for this.
Mix all ingredients for filling.
After 45 minutes to 1 hour, place dough on a floured surface and roll out into a rectangle. Spread filling over it, then roll from one edge to the other. Place roll onto an oiled baking sheet; twist it for rustic look. Cover with a clean cloth.
Switch your oven to 180*C. When ready, place roll inside and bake for 35-45 minutes. Enjoy warm or cold.



 Rustični rolat sa sirom i pestom

Nemam nmogo reci o ovom receptu, osim da je jako zgodan za dane kada nemate mnogo vremena za pripremati ruckove i uzine. Samo odrezete komad i imate ukusan obrok. Sto je najvaznije, sadrzi i proteine i UH...djeca ga vole.

Potrebno:
3 1/2 solje brasna
1 1/2 k soli
2-3 K maslinovog  ulja
2 k instant kvasca
1 1/3 solje mlake vode
Fil- 500 gr rikota sira (ili sl)
1 jaje
1 k soli
2-3 K pesto (od bosiljka po mogucnosti - recept)
Nacin:
Umijesite tijesto, pokrijte i ostavite na toplome da nadodje.
Pomijesajte sve sastojke za fil.
Nakon dizanja, razvaljajte tijesto u pravougaonik na pobrasnjenoj povrsini. Premazite ga ga pripremljenim filom i zarolajte. Postavite na nauljenu tepsiju; uvrnite nekoliko puta za rustican izgled. Pokrijte cistok krpom.
Ukljucite rernu na 180*C; kada se zagrijala, smjestite rolat unutra i pecite 35-45 minuta. 
Uzivajte toplo ili hladno.

Polish 'Lazy Pierogi'




Simple, comfort Polish food that tastes good!

Ingredients:
Dough-
500 g ricotta 
2 eggs 
1 yolk
1 tsp salt
2-3 tbs cream
2 cups flour (+)
2-3 tbs semolina
Butter / crumb mixture-
40-60 g butter
1/2 cup crumbs
Method:
Mix all ingredients in a bowl; you'll get a sticky dough. Place dough onto well floured surface; divide in 2 and roll into sausages. 
Place a large pan with salted water to boil. Cut dough sausages on diagonal to get pieroges. Place into boiling water (8-10 at a time) and cook for 5-7 minutes; take out onto absorbent paper. Repeat with the rest. Melt butter, add crumbs and cook for 2 minutes. Place pieroges into a bowl and sprinkle with crumbs.
Enjoy!




Poljske 'Lijene Piroške'

Jednostavno, zadovoljavajuce jelo Poljske, koje je odlicnog ukusa!

Potrebno:
Tijesto-
500 gr sira (rikota ili slicno)
2 jaja
1 zumance
1 k soli
2-3 K kajmaka / vrhnja
2 solje brasna (+)
2-3 K griza
Maslac / mrvice posip-
40-60 gr maslaca
1/2 solje mrvica
Nacin:
Umijesite sve sastojke za tijesto; dobicete ljepljivu masu, koju istresete na pobrasnjenu povrsinu. Podijelite na 2 dijela i rukama razvaljajte da dobijete 2 dugacka valjka (kobasice).
Stavite lonac sa zasoljenom vodom da prokljuca. Rezite valjke dijagonalno i ubacujte u kljucalu vodu, po 8-10 komada. Izvadite i ocijedite. Ponovite postupak sa ostalima.
Zagrijte maslac i proprzite mrvice. Smjestite piroske u posude za serviranje i pospite mrvicama. Uzivajte!

Savoury Roll


Ingredients:
Dough-
2 cups SR flour
pinch of salt and cayene pepper
1 tbs butter
1/2 cup milk
1 egg, beaten
Filling-
500 g mince
2 tbs chopped celery
3 tbs  grated carrots
2 tbs chopped onions
1 tbs flour
1 tbs curry powder
1 tbs chopped parsley
1 tbs Worcestershire sauce
2 tbs tomato sauce
Method:
First make filling-
Place mince, vegetables, flour and seasoning in a pan, over low heat. Stir until cooked; add parsley and allow to cool completely. (If to much fat on top, remove)
Dough-
Preheat oven to 200 *C. Sift flour, salt and pepper, rub in butter.. Add egg and milk and make a pliable dough. Roll into oblong shape. Place cooled mince mixture down the centre of pastry. Glaze edges and fold over meat. Place roll onto greased baking sheet (folded side down). Glaze roll, slit diagonally in 3-4 places, and bake for 25-30 minutes. Serve with salad.

Slani rolat sa mesom i povćem


Potrebno:
Tijesto-
2 solje samodizajuceg brasna
malo soli i crvenog bibera
1 K maslaca
1/2 solje mlijeka
1 jaje
Fil-
500 gr mljevenog mesa
2 K sjeckanog celera
3 K rendane mrkve
2 K sitno sjeckanog crvenog luka
1 K kari praha
1 K sjeckanog persuna
1 K 'Worcestershire' sosa
2 K tomato sosa (gustog)
Nacin:
Najprije napravite fil-
Stavite meso, povrce, zacine i brasno u posudu. Mijesajte i kuhajte na slaboj vatri dok meso ne promijeni boju.. Ubacite persun i ostavite ohladiti.  (Ako je meso premasno, skinite nesto masnoce sa ove mjesavine)
Tijesto-
Ukljucite rernu na 200* C. Pomijesajte brasno sa zacinima, utrljajte maslac. Dodajte jaje i mlijeko i umijesite tijesto.  Razvaljajte na pravougaonik. Nanesite mjesavinu sa mesom na srenji dio tijesta. Premazite slobodne krajeve sa vodom i preklopite. Stavite rolat na namacsenu tepsiju (preklop neka bude na donjoj strani). Premazite rolat (voda ili mlijeko), razrezite dijagonalno na 3-4 mjesta i pecite oko 25-30 minuta.
Servirajte sa salatom.

Savoury Crepes...and a message




 Dear readers, I was searching for some tips on decorating cakes, and came across a lovely blog, that gave great recipe for fondant. RECIPE:
Ingredients:
1 cup flour
1 egg
1 cup milk
pinch of salt
3/4 cup water
ham and chives, chopped
oil (spray) for pan
Method: Beat egg with salt; pour 1/3 cup milk, add flour and vigorously mix. Add the rest of milk and water; beat until very smooth. Mix in ham and chives. Heat oiled pan. Pour 1/2 cup of batter onto it, swirl until surface of pan coated; fry for 30-50 seconds (top should change its colour to opaque), flip over and fry for 5-10 sec. Repeat with the rest of batter. Serve warm!


RECEPT:
Potrebno:
1 solja brasna 
1 jaje 
1 solja mlijeka 
prstohvat soli
3/4 solje vode 
sunku i vlasac, sjeckani 
ulje za tavu 
Nacin: Umutite jaje sa solju; dodajte 1/3 solje mlijeka i brasno. Zestoko mijesajte, pa dodajte ostatak mlijeka i vodu- promijesajte. Umijesajte sunku i vlasac. Zagrijte nauljenu tavu, uspite 1/2 solje mjesavine, okrecite tavu dok se povrsina ne prekrije sa tijestom i pecite 30-50 sekundi (povrsina ce promijeniti boju). Prevrnite pa pecite jos 5-10 sekundi. Utrosite svo tijesto pekuci na ovaj nacin. Servirajte toplo!

Beer Crackers



Something savoury for Friday...with drinks. Have a good weekend everyone!

Ingredients:
1 kg flour
1/2 tsp baking powder
2 tsp salt
330 ml beer
200 ml oil
100 g sesame seeds
100 g poppy seeds
1 egg beaten, for brushing (optional)
Extra seeds for sprinkling
Method:
Switch oven to 180*C. Prepare baking tins.
Mix all ingredients into a stiff dough. Roll out to 3 mm thickness, and cut out shapes. Place onto tins, brush with egg and sprinkle with seeds. Bake for 10-12 min.
Keep on a cool and dry spot for a couple of weeks.

Krekeri sa Pivom

Nesto slano za petak...uz pice. Dobar vikend zelim svima!

Potrebno:
1 kg brasna, svenamjenskog
1/2 kesice praska za pecivo
2 kasicice soli
1 boca piva, (3,3 dl)
2 dl ulja
100 gr sezama
100 gr maka, nemljevenog
1 jaje za premazivanje (po zelji)
Dodatno sjemenki za posipanje
Priprema:
Pomijeshati sve sastojke u glatko tijesto.
Razvaljati na 3 mm debljine, te vaditi razne oblike (ili rezati nozem na prutice).
Peci na 180*C 10-12 min.
Pozelji, prije pecenja mozete premazati umucenim bjelancem/ jajetom i posuti sa sjemenkama po vasem izboru. Na hladnom i suhom mjestu traju nekoliko sedmica.

Emperor's Pie


This easy-to-make savoury slice is very popular in Balkan countries. It can be adapted to your personal taste, and/or according to your fridge content.
For my Aussie friends, who asked for recipe!


Ingredients:
4 eggs, lightly beaten
1 cup yogurt (or buttermilk)
3/4 cup oil
1/2 cup cottage cheese (or feta)
150 g ham, diced (or salami, frankfurters...)
1 small red capsicum , diced
100 g cornichons (pickled cucumbers), diced
1 -1,5 cups SR flour
1 cup corn meal
1/2 teas baking powder
1 teas salt
Pepper, oregano (optional)
Sesame seeds, sliced Kranski, olives or cheese for topping (your choice)

Method:
Preheat oven to 180*C, prepare a baking dish (25X30 cm), or muffin tins. Put all ingredients in a bowl, mix well. Pour into the dish and bake for 40 min (less if using muffin tins), or until golden at top.
Good alternative for kids lunch!



Carska Pita

Sastojci:
4 jaja
1 jogurt
3/4 solje ulja
1/2 solje sira, feta ili obicni
150 gr nekog suhomesnatog proizvoda
1 mala crvena paprika
100 gr kiselih krastavcica
1 solja sitnog kukuruznog brasna
1-1,5 solja brasna sa praskom za pecivo
1 kasicica soli
1/2 kasicice praska za pecivo
biber, origano (po zelji)
tvrdi ribani sir, sezamovo sjeme, masline za po povrsini (vas izbor)

Nacin:
Umutiti jaja, dodati jogurt, ulje, sjeckano povrce, i ostale sastojke. Dobro izmijesati. Sipati u pleh 25X30 cm velicine, ili mafin kalupe; peci na 180*C oko 40 minuta (manje za mafin kalupe).
Recept je prilagodljiv sadrzaju vaseg frizidera!
