Korean Beef



































If you never tried beef marinated in Korean style, please do. This recipe comes from my Korean friend ('Ann'). It's one of my favourite ways of cooking beef.

Ingredients:
500 g beef steak (sirloin, rump, flank,..your choice)
1/4 cup soy sauce
1/4 cup chicken broth (or water)
1 tbs sesame oil
1 tsp ginger, grated
1 tsp garlic, grated or crushed
2 tbs brown sugar (I added stevia substitute)
1/2 tsp black pepper
2 spring onions, sliced
1 tbs sesame  seeds (optional, for sprinkling)

Method:
Slice steaks across the grain, into strips. Place it in a bowl and add all other ingredients. Mix well and leave it in a cool place for 1+ hours (in the fridge if leaving overnight). Preheat bbq  (or large pan) to very high temperature. Cook a few pieces at times (don't overcrowd pan, or you will not achieve wanted texture). Sprinkle with sesame seeds and serve with a salad.




Govedina na Korejski način

Ako nikada niste probali Korejsku mariniranu govedinu, vrijeme je da to ucinite. Recept dolazi od moje prijateljice 'Ane' . Ovakav nacin je ubrzo postao jedan od najdrazih metoda spremanja govedjeg mesa.

Potrebno:
500 gr govedjeg stejka (ramstek ili koji volite)
1/4 solje sojinog sosa
1/4 solje pileceg temeljca (ili vode)
1 K sezamovog ulja
1 k djumbira, sitno rendan
1 k bijelog luka / cesnjaka, sitno rendan ili protisnut
2 K braon secera (ja sam stavila 'stevia' zamjenu)
1/2 k crnog bibera
2 mlada luka, sjeckana
1 K sezamovog sjemena (opciono, za posuti)

Nacin:
Izrezite meso na 'prutice' poprecno od vlakana. Stavite u posudu i dodajte sve ostale sastojke, dobro promijesajte i ostavite 1sat+ na hladnom mjestu (ili u frizider preko noci).
Zagrijte dobro tavu ili rostiljsku povrsinu i pecite nekoliko komada brzinski. Ne pretrpavajte povrsinu, jer ce se onda 'skuhati' i necete postici zeljenu teksturu. Pospite sa sezamovim sjemenom i sluzite sa salatom.

Korean Zucchini Pancakes



Feeling sick of meat, sweets and rich food? I do! Here is recommendation for some  light, vegetarian food;  perfect as canape bases too!

Ingredients:
Pancakes-
2-3 zucchinis, grated or cut into matchsticks
1 egg, beaten,  
1 green onion, sliced finely (or 1/4 medium onion)
3/4-1 cup flour
1/2 cup water
salt and pepper
a bit of oil for frying (or nonstick pan)
Dip-
2 tbs soy sauce
1 tbs water
2 tsp red vinegar
1 tsp sugar
black pepper
sesame oil (a few drops) and seeds (optional)

Method:
Mix all ingredients for pancakes. Heat a pan (and oil, if using). Spoon mixture into pancakes, as big or small as you want. Cook for 1-2 minutes, then turn and cook other side. Place onto serving plate.
For dip, Mix all ingredients and place into a shallow dish. Serve warm. Optionally, top with some prawns, salmon or other toppings.

 
Korejski 'penkejks' sa tikvicama

Je li vam muka od mesa, kolaca i konstantnog prejedanja teske hrane? Meni jeste! Evo prijedloga za lagani, vegetarijanski obrok; perfektno i kao osnove za kanapes.

Potrebno:
'Penkejks'-
2-3 tikvice, rendane ili sitno sjeskane na prutice
1 jaje, umuceno
1 mladi luk, sitno sjeckan (ili 1/4 srednjeg crvenog luka)
3/4 - 1 solja brasna
1/2 solje vode
so i biber
ulje za przenje (ili neprijanjajuca tava)
Umak-
2 K soja sosa
1 K vode
2 k crvnog sirceta
1 k secera
crni biber
ulje sezama (par kapi) i sjeme (opciono)

Nacin:
Umijesajte sve sastojke za penkejks. Zagrijte tavu ( i ulje ) i kasikom vadite smjesu u tavu (onoliko velike koliko zelite). Pecite 1-2 minute, zatim okrenite i pecite i drugu stranu. Stavite ih na tanjir za serviranje.
Za umak, pomijesajte sve sastojke i smjestite u plitku posudu. Servirajte tople, ili koristite ih kao podloge za kanape; sa kozicama, lososom ili necim drugim.

Lotus root



For last few weeks I feel totally uninspired for writing. I still cook a lot, but have no desire to take photos and write about it. I hope it won't last, as I rely like bloging, and it helps me in developing my English language and keeping my Bosnian in memory. Keeping with technology is another positive thing about bloging. For now I'm going to use  my (Korean) friend's recipe for preparing lotus root.

Ingredients:
300g lotus, cleaned, peeled and sliced 
1 tbs white vinegar
1/2 cup water
4 tbs soy sauce
2 tbs corn syrup
2 tbs caster sugar
1 tsp sesame seeds
a few drops of sesame oil
Method:
Put lotus root slices in a saucepan with water to cover add  vinegar and cook for 20 minutes to avoid bitterness. Drain in a colander.
Mix water, soy sauce, corn syrup and sugar. Cook over medium heat for 5 minutes until sugar  dissolved, then add the cooked lotus roots. Keep mixing until no liquid is left, it will take about 15 minutes. Turn off the heat. Add the sesame seeds and oil, mix one more time then serve.

Korijen Lotusa (lopoča) na Korejski nacin

U posljednje vrijeme sam bezvoljna za pisanje postova, a vidim da je zatisje nastupilo i na mnogim drugim blogovima koje pratim. Sve manje se pise i  komentira. Nadam se da ce ovaj neinspirativni period ipak proci, jer bloganje ima svoje cari. Meni licno pomaze u 'odrzavanju' mog' maternjeg jezika i 'vjezbanju' Engleskog. A tu je naravno i druzenje sa ljudima koje vole iste stvari, drzanje koraka sa tehnologijom...Za sada evo jednog recepta (moje Korejske prijateljice) za pripremu Lotusovog korijena.

Potrebno:
300 gr korijena lotusa, ociscen, oguljen i izrezan
1 K bijelog sirceta
1/2 solje vode
4 K sojinog sosa
2 K kukuruznog sirupa (ili secerni sirup)
2 K secera
1 k sezamovog sjemena 
par kapi sezamovog ulja
Nacin:
Smjestite reznjeve lotusa u serpu, pokrijte vodom dodajte sirce i kuhajte 20 minuta (ovo ce odstraniti gorcinu). Ocijedite u kolanderu.
Pomijesajte vodu, soja sos, kukuruzni sirup i secer. Kuhajte na srednjoj vatri oko 5 minuta, zatim ubacite lotus korijen. Mijesajte dok vecina tecnosti ne ispari, oko 15 minuta. Iskljucite i umijesajte sezamovo sjeme i ulje. Posluzite!

Korean Chicken



This is not a truly authentic recipe, but my Korean friend like it anyway :-)

Ingredients:
600-800 g tenderloins, cut into strips
1/2 cup light soy sauce
2 garlic cloves, crushed
1,5 cm ginger, grated
1 tbs sesame oil
1/2 Nashi pear, grated
1-2 shallots, sliced finely
Method:
Mix all ingredients, let it marinade for 2 hours+.
Take meat out of marinade. Pan fry or bbq (high heat)for a few minutes each side, or until golden and cooked trough.
Serve on bed of green salad and rice noodles. Sprinkle with sesame seeds (optional).


Piletina na Korejski nacin

Ne mogu reci da je recept autentican 100%, mada vecnu sastojaka Korejci koriste za mariniranje mesa. Bitno je da se dopada mojoj Korejskoj prijateljici ;-)

Potrebno:
600-800 gr mekseg dijela od pilecih prsa, rezanih po duzini
1/2 solje svjetlog soja sosa (manje zasoljen)
2 cena bijelog luka, protisnutog
1,5 cm djumbira, sitno rendanog
1 K sezamovog ulja
1/2 Nashi (Azijske) kruske, rendane (moze druga vrsta)
1-2 mlada luka, sjeckana na sitne kolutice
Nacin:
Pomijesajte sve sastojke, ostavite marinirati 2+ sata.
Izvadite meso iz marinade. Pecite na tavi ili rostilju, dok ne postane zlatnozuto i peceno, obicno 2-3 minute sa svake strane i na jakoj vatri.
Servirajte preko zelene salate i sa rizinim rezancima. Pospite sa sezamovim sjemenom, po zelji.
