'Bulochki' - Russian Sweet Buns with Apple Filling




Do you watch Winter Olympic Games? If you do, these Russian sweet buns will make you feel  as you were in Sochi.  Experience complete!

Ingredients:
Dough-
3 cups flour
2/3 cup (skin) warm milk
3 tbs sugar
2 tsp yeast
2 eggs, beaten (leave 1/2 egg white for brushing)
125 g butter, melted
Apple filling-
5-6 apples (Granny Smith),peeled and diced
2/3 cup (+,-) sugar
juice of 1/2 lemon
vanilla extract
cinnamon (optional)

Method:
Make a dough as you would any with yeast; by bread machine or by hand. Cover and leave on a warm spot (45 min).
Place apples and sugar into a pan. Bring to boil and cook for 10 minutes. Add lemon juice and vanilla (+ cinnamon if using). If there is too much liquid left, you'll need to drain it. Let it cool
Divide the dough into 20 balls. Roll each into an oval, then fill with a full tsp of apple stuffing. Press the dough along the edges well, and place the 'seam' down onto prepared baking pan (with paper). Leave some space for spreading, between buns. Cover and leave 45 minutes, then brush with a beaten egg white and bake for 12-15 minutes on 180*C. Serve warm or cold.




Ruske Slatke Kifle sa punjenjem od Jabuka (Bulochki)

Gledate li Zimske Olipijske Igre? Ako da, ove slatke Ruske kifle ce uciniti da osjecate kao da ste u Sociju. Kompletan ugodjaj!

Potrebno:
Tijesto-
3 solje brasna
2/3 solje mlijeka, mlakog
3 K secera
125 g maslaca, otopljenog
2 jaja, umucenih (ostavite 1/2 bjelanca za premazivanje)
2 k instant kvasca ( ili svjezeg)
Fil od jabuka
5-6 zelenih jabuka, oguljene i  sjecene na kockice 
2/3 solje (+,-) secera
sok 1/2 limuna
vanila 
cimet (opciono)  

Nacin:
Umijesite tijesko kao sto biste bilo koje drugo dizano; pokrijte i ostavitena toplom mjestu.
Jabuke i secer stavite na vatru i kuhajte oko 10 minuta. Ubacite sok limuna i vanilu. Ohladite. (Ako je mnogo tecnosti ostalo, procijedite)
Podijelite tijesto na 20 loptica, razvucite svaku u oval i punite sa po 1 kasicicom fila. Pritisnite krajeve tijesta dobro (duza strana) i okrenite bolju stranu gore, smjestajuci na tepsiju (sa papirom). Ostavite malo razmaka izmedju kifli. Pokrijte i ostavite oko 45 minuta na toplome, zatim premazite bjelancetom i pecite 12-15 minuta na 180*C. Uzivajte dok su tople ili kada se ohlade.

'Russian Salad' - A Classic of Balkans



I can't imagine New Year Eve without 'Russian Salad'. It's classic of Balkan countries, and I never heard any Russian mentioning something simmilar.
It goes well with any meat; it can last for whole week!


Ingredients:
4-5 medium potatoes, red, cooked in their skin, peeled
2-3 medium carrots, cooked
4 eggs, cooked
500 g peas, cooked
300-400 g cornichons / gherkins
250 g chicken (ham) salami, diced (optional!)
400-500 g mayonnaise (Tommy or SW, or make your own)
salt, pepper, lemon juice, sour cream, mustard to taste
Method:
Dice all vegetables, eggs and salami, mix well. Add mayonnaise and seasonings. Refrigerate, covered with plastic foil.
One pictured is without salami.



Ruska Salata

Potrebno:
4-5 srednjih crvenih krompira, kuhanih u ljusci
2-3 srednje mrkve, kuhane
4 jaja, kuhanih
500 gr graska, kuhanog
300-400 gr kiselih krastavcica
250 gr pilece salame ili sunkarice (nije neophodno!)
400-500 gr majoneze (tomy ili domace - recept)
so, biber, sok limuna, kajmak/pavlaka, senf po ukusu
Nacin:
Isjeckajte svo povrce, jaja i salamu na kockice. Dodajte majonez i ostale zacine, dobro promijesajte. Smjestite u frizider, pokriveno prozirnom folijom.
Verzija na fotografiji je bez salame.

Russian Black Bread



Authentic or not, I like this easy version!

Ingredients:
2-2 1/4 cups water
3 tbs oil
2 cups rye flour
2 cups wholemeal flour
2 cups bakers flour
1 tbs sugar
3/4 tbs salt
1 tbs cocoa
2 teas instant coffee (I added chicory-coffee syrup)
2 teas yeast
1/2 tbs caraway or cumin seeds
Method:
If you're using bread machine, put all ingredients inside and program for making dough. (Or, knead by hand for at least 10 minutes, let it rest for 1 hour). After that, take the dough out on a floured surface, knead for couple of minutes, divide in 2, shape into loaves, put into pans and let double. Bake 40-45 minutes at 180*C.

Ruski Crni Hljeb/Kruh

Potrebno:
2-2 1/4 vode
3 kasike ulja
2 solje razanog brasna
2 solje brasna od punog zrna psenice
2 solje brasna za hljeb/kruh
1 kasika secera
3/4 kasike soli
1 kasika kakaa
2 kasicice instant kafe
2 kasicice instant kvasca
1/2 kasike kima
Nacin:
Ako imate masinu za hljeb/kruh, stavite sve unutra i programirajte mijesenje. Ili, zamijesite tijesto od navedenih sastojaka - voda mora biti mlaka- mijesite bar 10 minuta. Ostavite nadolaziti 1 sat. Premijesite tijesto na pobrasnjenoj povrsini, oblikujte po zelji i smjestite u posudu u kojoj cete peci. Ostavite da postigne duplu velicinu, pa onda pecite 40-45 minuta na 180*C.

'From Russia With Love' Cake



Recipe found on a Russian cooking website.

Ingredients:
-Cheese balls:
250 g cream cheese
1 egg
50 g sugar
50 g coconut, desiccated
1 tbsp corn flour
2 tbsp plain flour
-Chocolate sponge:
5 eggs (or 4 large)
60 g sugar
50 g dark chocolate
2 tbsp flour
2 tbsp corn flour
3 tbsp cocoa
-Ganache:
80 g chocolate
40 ml
Method:
Preheat your oven to 175*C. Prepare 22 cm cake tin; oil and dust with flour.
Mix all the ingredients for balls, form them and place on bottom of the tin.
Separate eggs; Make a stiff foam out of egg whites, add sugar and mix well. Add egg yellows, one by one, while mixer running. Switch off, then sift flours and cocoa. Fold in, add chocolate and mix well. Pour over the balls, and bake for 30-40 minutes.
Heat cream, add chocolate and mix until smooth. Pour over the cake. Enjoy!




Ruski cokoladni kolac sa lopticama od sira

Potrebno:
-Loptice od sira
250 gr krem sira
1 jaje
50 gr secera
50 gr kokosa
1 kasika skrobnog brasnoa
2 kasike brasna
-Cokoladni biskvit
5 jaja (ili 4 veca)
60 gr secera
50 gr cokolade
2 kasike brasna
2 kasike gustina
3 kasike kakaa
-Preliv
80 gr cokolade
40 ml krema/kajmaka slatkog
Nacin:
Pripremite kalup promjera 22cm - nauljite i pobrasnite. Ukljucite rernu na 175*C.
Pomijesajte sve satojke za loptice, pa ih nabrasnjenim rukama formirajte i stavite na dno kalupa.
Odvojite bjelanca, umutite sa secerom u cvrst snijeg. Dodajte jedno po jedno zumance. Iskljucite mikser pa prosijte brasna i kakao na povrsinu. Lagano sjedinite rukom, pa dodajte cokoladu i ponovo promijesajte. Prelijte preko loptica i pecite 30-40 minuta.
Za preliv, stavite kajmak i cokoladu u posudu. Topite i mijesajte. Prelijte preko kolaca.
Pecite na 175*C 30-40 minuta
